Caribbean Corn Bread

Intriguing is what I thought when I saw this recipe. I love corn bread. I remember a place where we used to go when we first got married that served the most amazing corn muffins. It was a buffet and you could have  all you wanted and that was my favorite thing to eat. I have never been able to replicate those corn muffins but it doesn’t stop me from trying.

Lightest Corn Muffins

Lightest Corn Muffins

1 cup all-purpose flour
1/2 cup yellow cornmeal
1/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1/4 cup milk
8 tablespoons (1 stick) unsalted butter, melted

Directions:

Preheat the oven to 350 degrees. Butter and flour 8 muffin cups or line them with paper liners.In a medium bowl, sift the dry ingredients together. In a large bowl, whisk the eggs and milk together. Add 1/3 of the dry ingredients to the egg mixture, then 1/3 of the melted butter, and stir gently just until incorporated. That’s The Way the ‘Cauli’ Crumbles

Cauliflower is one of my favourite vegetables and I cringe when I hear people say they’ll only eat it drowned in cheese sauce. Don’t get me wrong, it’s a gorgeous combination, but there’s so many more possibilities.

It’s fabulous stir fried with chilli, bacon and pine nuts or lightly blanched and mixed with a herb vinaigrette. Italians have the right idea adding it to pasta and topping with bread crumbs and Indians mix it with potatoes, lentils and fragrant spices that the cauliflower soaks right up.
