Forgotten Puddings

Most people you talk to have not had either bread pudding or rice pudding lately.  This is a crying shame because these desserts are some of the best! Bread pudding sounds kind of dry, but it is not.  It is buttery and creamy  and warm. It is just the perfect comfort food. Bread pudding is traditionally  from our southern states, but the British, also, have their version.

Caramel Popcorn | October 29, 2008

Caramel Popcorn

Caramel Popcorn

1 c butter
2 c brown sugar
½ c dark or light corn syrup
5 qt. popped corn
½ t baking soda
1 t vanilla
1 t salt

Spread popped corn out in a large jelly roll pan.  Melt butter, brown sugar, and syrup over medium heat.  Remove from heat and add baking soda, vanilla, and salt.  Stir vigorously and pour all over corn, tossing to coat.  Bake at 275 degrees for app. 20 minutes.  Toss often.  YUM!
