3 Great Uses for Left Over Coffee

If you’re like me, every morning you get up and brew coffee while anxiously waiting for it to be ready to hit your lips! Sometimes my eyes are actually bigger than my appetite for the amount of java I’ve made, and I’ve found some interesting ways to make good use of the leftovers of this luscious nectar. Important: All three suggestions use plain black coffee, minus any additives such as cream or sugar and it is important to cool the coffee down before using it. Here we go!

The calender has turned and 2009 is marching on. I want to lodge a complaint — stop it; I am not organized enough for that yet! (Hmm, is there a board to whom I can submit that complaint?)

Grandmother’s Apple Cobbler

My Grandmother’s Apple Cobbler

Dough for crust:
3 c. of flour
¾ c. sugar
1 ¼ c. shortening
¼ t. salt
2T water

Cut all of these ingredients together with a pastry blender.  Divide into two.  Press half of dough into the bottom and sides of a 9″x13″ pan.  Be careful not to overwork this dough, so as not to make it tough.  Save the rest of the dough for lattice over the top.

Filling

4 c. peeled, sliced apples, (for COOKING)
1 ½ T cinnamon
1T nutmeg
2 c. sugar
2 c. water

Fresh Apple Cake | October 6, 2008

FRESH APPLE CAKE 1-1/2 C.  Mazola oil2 C. sugar2 eggs1 tsp. vanilla3 C. applies, diced3 C. sifted flour1/2 tsp.cinnamon1/2 tsp. soda1/2 tsp. salt1 C. nuts, chopped Stir together the first 4 ingredients only enough to break up eggs.  DO NOT OVER-MIX.  Add apples, flour and rest of ingredients.  Grease and flour angel food cake pan or bundt pan.  Pour into pan and bake at 350 degrees for about 1 hour and 20 minutes.  Can be sprinkled with sifted powdered sugar or glazed with a powdered sugar icing. (I always grease with margarine and I don’t flour the pan – I turn it out … Read More »
