PinExt Meatless Monday: Rosemary Garlic White Bean Dip

If you’re looking for a simple appetizer recipe that doesn’t take a lot of ingredients or time, this rosemary garlic white bean dip is the perfect pleaser and can be served with chips, veggies, or pita.

Rosemary Garlic White Bean Dip

Ingredients:

1 15-oz can of white cannellini beans

3 tbsp olive oil

1/2 fresh lemon, squeezed

1tsp salt

Fresh, cracked pepper, to taste

1tsp rosemary

1 garlic clove, minced

Combine the beans, olive oil, and fresh lemon juice in a food processor until it becomes a mashed texture. If the beans are still too thick, add a little more oil until the consistency is as desired. The consistency should be similar to mashed potatoes.

Add in the rest of the ingredients in the food processor and combine. Make sure to taste while still in the food processor to see if you need to add any more salt or other seasonings (don’t forget, if you’re adding salt and will be dipping chips – the chips will make the dip more salty)!
