Smoked Salmon Crostini with Lemon Dill Aioli

By: Christianne Klein, author of Christianne’s Herbal Kitchen: Fresh Herb Recipes for Body and Soul

This is an awesome appetizer for parties. The lemon dill aioli melts right into the toasted bread and gives you a savory flavor. I usually tone down the garlic and kick up the volume on the lemon, but the choice is yours. Adjust it to your taste and make it your own creation!

Ingredients:

Lemon Dill Aioli

1/2 garlic clove, mashed

1/2 cup mayonnaise

2 tablespoons extra virgin olive oil

1 1/2 tablespoons fresh lemon juice

2 teaspoons fresh dill, minced

Sea or Himalayan salt to taste

Freshly cracked black pepper to taste

Crostini

1/2 baguette, sliced

1 tablespoon extra virgin olive oil

Lemon Dill Aioli (see recipe)

4 ounces smoked salmon

1 Persian or other small, seedless cucumber, sliced

1 green onion, julienned

Sprig of dill for garnish

Directions:

For Aioli: Mash garlic into paste and place in small bowl. Whisk in mayonnaise, olive oil, lemon juice and dill. Season to taste with salt and pepper. Cover and chill. Makes approximately 2/3 cup aioli.

For Crostini: Turn on oven broiler and leave door ajar to vent. Slice baguette into 1/4-inch to 1/2-inch slices. Place slices on baking sheet and brush or drizzle slices with olive oil. Bake until golden brown in color, about 1-2 minutes. Remove baking sheet from oven, and place slices on serving tray. Top each crostini slice with a small amount of Lemon Dill Aioli, smoked salmon, sliced cucumber and green onion. Garnish with a sprig of dill.

Makes approximately 16-20 crostini
