PinExt Beer Cake

The beer cake is out of the oven, just in time for the football game. You know how I feel about beer and football. I couldn’t decide what to make this time so I ran a poll. In a flood of votes, the Beer Cake won by a narrow margin.

This is a great cake. Spicy, sweet and dense. Perfect for a cloudy winter day.

Start by preheating your oven to 350 degrees. Grease and flour a tube pan. I used my FABU square tube pan. Next cream the butter until soft gradually adding the sugar, creaming until light and fluffy.

Add the beaten eggs and beat well. Add the salt, soda and spices to a bowl and mix together.

Reserve 2 tablespoons and add the rest to the batter. Slowly add the beer and blend thoroughly.

Toss dates and nuts with reserved flour.

Fold into the batter.

Pour into prepared pan. Bake for 1 hour and 15 minutes or until tester comes out clean. Cool in pan for 10 minutes and then turn out of pan to cool completely.

This cake reminds me of the date nut bread they used to serve at Jojo’s Restaurant when I was in high school, except spicier. But it is dark and rich and oh so FABU!

Beer Cake

1 c. butter
2 c. brown sugar, firmly packed
2 eggs, well beaten
3 c. all purpose flour
2 tsp. baking soda
1 c. chopped walnuts
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1/2 tsp. allspice
1 can beer (I use Miller Lite)
2 c. finely chopped dates

Cream butter until soft, in large bowl, gradually add sugar, creaming until light and fluffy. Add beaten eggs and beat well. Sift together flour, salt, soda and spices, reserve about 2 tablespoons and beat remainder into batter. Slowly add beer, (it may foam while beating) and blend thoroughly. Toss nuts and dates with reserved flour mixture to coat lightly. Fold into batter; blend thoroughly. Pour batter into greased and floured 10 inch tube pan. Bake in preheated oven at 350 degrees for 1 hour and 15 minutes, or until cake tester comes out clean. Cool in pan for 10 minutes and turn out of pan to cool completely. Cover and refrigerate overnight. Serve plain, dust with powdered sugar.
Note:If you are using a 2 piece pan, be sure you let the cake cool on the bottom piece before trying to remove or it will break!
